I love chai. I make it myself from scratch. I have 2 chai pots for home brewing a small 1-2 person and large 4-6person. My kids love chai. Its a shared experience our family has always had especially in winter. I have been known to make it for their sports carnivals especially swimming (often fraught with cooler weather in February in Gippsland).
I spoke to the chef Bek to figure out how to do it at home. The ($80/kg) Prana Chai mix of ~30g (2-3 heaped teaspoons) was seeped for 5 minutes then frothed with soya milk till it was almost like cream.
The tannins from the black tea sharp but more importantly was the gentle nature of the spices: cardamom, cinnamon , cloves, star anise, peppercorns, ginger root and surprise honey is added as well. So adding extra honey is truly indulgent. It looked frothy and off white. To see the tea expanded when strained was a delightful aroma to smell tannin/mixed spice I wanted to eat but resisted.
Why oh why do hot drinks taste better when you are out? At $6 totally worth it for such a unique experience.
My only wish was that it was in a small pot with a lid keeping it warm for a more prolonged experience and on a wooden board for aesthetics. Please please if you are a chai enthusiast this is the cafe spot for you, well done The Dock Espresso Bar!
